Thankful - November 27th

Today, I'm thankful I'm such a good cook - ha! Not really, but I am thankful that I got off my booty and made something with all that leftover turkey (I also cleaned my entire house and did all the laundry and walked on the treadmill - all in an effort to get this labor started...but I digress)...

So - need something to do with that leftover turkey, here it goes.

Take all leftover turkey - I had about 4 cups of turkey, maybe less - and put in crockpot. All of my turkey was off the bone and de-skinned/de-fatted (de-skinned makes no sense now that I re-read this, but you know what I mean).
Add chicken broth (I used 2 boxes, but could have gotten away with 1 and a half, but oh well).
Add 3 stalks chopped celery, a couple chopped carrots, and 2 diced potatoes - you can also add onions, but I skip those as I hate them...
Season with whatever you like - I used thyme, garlic, minced onion, pepper, butter, all-purpose seasoning, etc. If I would have had some bullion I would have added it, but I try not to subject Matt to my salt cravings...
Let simmer all day - prior to serving, shred the turkey and skim off any extra fat. Feel free to add flour to thicken it up.
Then I cooked some biscuits (the kind in a cardboard tube) and then poured the soup over.

Yum.

So this made a lot, I'm freezing at least 6 servings that should come in handy when little one arrives. Anybody have any other suggestions for crockpot or freezable meals??

  1. YUM!! We took all the turkey and my sister made a chicken casserole recipe with it, it was pretty good if you like casseroles.
