Ingredients -
2 or so pounds of small red potatoes
Handful of green onions
Ingredients to taste/texture -
Mustard
Mayo
Salt/Pepper
Garlic powder
Fennel
Boil the potatoes for 20 minutes - do not over cook!
While those are cooking, combine mustard (feel free to substitute dijon), mayo, green onions, and dashes of salt, pepper, garlic, and fennel and mix well.
Once the potatoes are done, drain and let cool. Once you can pick them up, quarter them, and put in a gallon plastic bag and add the dressing. Shake well.
Chill and serve!
Next time - I'll probably leave out the mustard, garlic and fennel, and replace with ranch dressing mix. Ummm, yes, I am from Oklahoma, and this will probably be fantastic!
